Creamy Tomato Chicken and Brown Rice

Made this for dinner tonight and was not sure how it would come out but it was YUMMMMMMYYY!  Thought I would share the recipe.  Sorry I didn't think about good pics until after we ate.  I will get better picture next time I make it.

Creamy tomato chicken and rice 

3 T butter
1 1/3 cup brown rice
3 cup water

Chicken and cream

3 tsp olive oil
3 chicken breasts cut into 1 inch cubes
1 t Italian seasonings
1 T garlic
1 ½ t sea salt
1 t pepper
(Feel free to add your favorite spices to your personal taste)
A pinch of red pepper flakes to taste
½ red onion chopped
¼ cup white wine
1 can diced tomatoes
1 can sweet corn
2 T flour
¼ cream
¼- ½ cup chopped cilantro

Cook rice according to directions.

Add oil and brown chicken over medium heat.  Season chicken while browning for about 5-8 min.  Add chopped onion and allow to sweat for about 2-3 min.  Stir in wine to de glaze the bottom of the pan.  Stir in drained corn and tomatoes.  Quickly stir in flour and reduce heat to low.  Lastly stir in cream and simmer on low for about 30 min covered. 

Once slightly thickened pour over rice in a serving dish and top with desired amount of cilantro.
For an extra kick my husband like to add a little Tapatio hot sauce.   Enjoy!!!!
