Spicy Sausage Soup


This Spicy Sausage Soup was inspired by Olive Gardens sausage and potato soup

1lb of spicy sausage
About 1 ½ cup carrots chopped
About 1 cup chopped greens (broccoli, Kale, Charred greens, ect.)
About 1 cup chopped red onion or about 6 chives
4 garlic cloves (or powder)
3 medium potatoes, halved long ways and then thinly sliced
About 1 shot tequila or ¼ cup white wine
2-3 cups stock
2 cups milk (12 oz condensed milk makes the soup thicker and creamier, just add a little extra stock to get enough liquid)
1 12oz can diced tomatoes
A pinch of salt
A pinch of pepper (red flakes if you want it very spicy)
1 bay leaf
A pinch of Italian seasoning
Additional seasoning can be added upon preference

Brown sausage in a large pan over med heat.  


Add chopped Garlic, carrots, onions, and greens to the pan, add seasonings and allow to sweat for about five-eight min.   
What I like to use but be careful it has salt in it.

Add tequila or wine and stir to deglaze the bottom of the pan.  Put the meat mixture into a crock pot set on low.  Add milk and stock, tomatoes and gently stir in chopped potatoes. 
I chop mine in half long ways and then thinly width ways

Allow to cook in crock pot for 4-5 hours or until potatoes and veggies are all tender enough to eat. 
I love to top mine with cheese
